Lovers of good wines and of having a good collection in the cellar must know how to preserve them in the best way. There are some tips that can make a difference.
The longer some wines remain in the cellars, the more they appreciate, but only if they have been stored correctly. In fact, it would be more correct to speak of aging, a process in which the wine changes its flavor and aroma to levels clearly higher than when it was just bottled. However, there are many factors that risk of compromising the organoleptic characteristics of the wine during aging. And if this happens, unfortunately the bottles have to be thrown away.
The first thing to pay attention to is the temperature of the room where the bottles are stored. The ideal winery should not exceed 14 °C or fall below 8 °C, and remain constant throughout the year so that the wine is not subjected to sudden changes in temperature. This rule applies to both red and white wines, since at high temperatures the taste can become rancid and the smell similar to that of vinegar. At low temperatures, on the other hand, there is a risk that the drink will turn bitter, losing its sweet nuances.
Also in the room where the bottles are kept. there must be humidity around 70%. This aspect is not linked so much to the wine as to the cork that seals the bottles. In fact, in a dry environment, this can be damaged and shrink, allowing air to enter the bottle and causing its contents to oxidize. If the humidity exceeds 75%, there is a risk that the cork will develop mold.
When you age the bottles, a rule advises never exposing them to direct light. Therefore, the room in which they will have to be placed must be dimly lit, with dim light. Indeed if the wine is exposed to light, oxidative processes are triggered inside it that alter its organoleptic characteristics. For safety, it is advisable to place the bottles inside wooden boxes.
Regarding the arrangement of the wine, the ideal is to take the bottles and arrange them horizontally or at least inclined so that the liquid remains in contact with the stopper. In this way the cork will also remain moist inside, preventing it from shrinking as seen above. Finally there is one last thing to consider and it is linked to the food that could be in the cellar. Cheeses and sausages in particular give off odors into the environment that could be transmitted to the wine, and it is better to store them in another room.
