According to researcher Ellen Strake, “The beneficial effects of quality meat proteins disappear if the meat is processed.” According to the World Health Organization, processed meat is “any type of meat that has been transformed by curing, curing, fermentation, smoking or other processes that help improve the flavor and preservation of food.”
For her part, the teacher Esther Lopez Garcia, Professor of the Department of Preventive Medicine at UAM advocated the importance of a balanced diet including a variety of protein sources: sin, legumes, nuts and unprocessed meats.

Processed meat
