Blue tomato: superfruit displaces traditional unique properties

It is the result of a genetic experiment conducted by 300 scientists that resulted in a high percentage of anthocyanins, natural pigments with recognized antioxidant properties.

The blue tomato is a relatively recent transgenic fruit, developed eight years ago in Norwich, UK, in an experiment carried out by a group of more than 300 scientists for medicinal purposes.

Development and characteristics of the blue tomato.

To create the blue tomato, the genes of a regular tomato were modified by incorporating genes from an ornamental flower known as snapdragon (Antirrhinum majus), known for its deep purple color. These genes allow tomatoes to produce anthocyanins, natural pigments with recognized antioxidant properties.

The result of this genetic modification is a tomato with an indigo blue skin that increases in intensity when exposed to sunlight. It retains its traditional red color internally when ripe and contains few seeds. This color combination is not only visually attractive, but also carries a number of additional health benefits.

Properties and benefits of blue tomato

Although the blue tomato is not yet widespread, it is already produced on a large scale in countries such as Canada, the United States and Spain for specialty stores. One of the main achievements of its development was the increase in the concentration of anthocyanins, which are responsible for its powerful antioxidant properties.

What are anthocyanins?

Anthocyanins are a type of water-soluble flavonoid found in many vegetables and fruits and are responsible for their red to blue color. They act as antioxidants, protecting cells from damage caused by free radicals. They are also used as natural coloring agents, enhancing the appearance of foods and providing additional health benefits.

Benefit for health

1. *Reduced risk of cardiovascular disease:* Anthocyanins present in blue tomatoes may help reduce the risk of heart disease by improving endothelial function and reducing inflammation.

2. *Improved visual health:* Research has shown that anthocyanins may help protect eye health and improve vision.

3. *Memory improvement:* It has been observed that anthocyanins may have positive effects on cognitive function and memory, which are critical for the prevention of neurodegenerative diseases.

4. *Skin care:* The combination of lycopene, beta-carotene, lutein and phytophene in blue tomatoes helps protect the skin from damage caused by ultraviolet rays and premature aging.

5. *Supports bone growth and tissue formation:* The content of these compounds is also beneficial for bone growth and the formation of embryonic tissue.

Comparison of blue tomatoes with other tomatoes

Antioxidant content

– *Blue tomato:* It is high in anthocyanins, as well as lycopene, beta-carotene, lutein and phytophene, offering a wide range of antioxidants that provide many health benefits.

– *Traditional tomatoes:* Rich in lycopene, a powerful antioxidant that helps reduce the risk of cardiovascular disease and has anti-inflammatory properties. However, they lack anthocyanins.

Benefit for health

– *Blue tomato:* In addition to antioxidant and anti-inflammatory properties, anthocyanins improve vision and memory, and protect skin and bones.

– *Yellow and orange tomatoes:* They contain more beta-carotene, which is converted into vitamin A, essential for eye health and the immune system, but do not contain anthocyanins.

Color and culinary uses

– *Blue tomato:* Its indigo blue skin adds a special appeal to culinary dishes, and when ripe it surprises with its red interior.

– *Green tomatoes:* Used for its sour taste in certain recipes such as green tomato jam or fried green tomatoes. Although they have antioxidants, they are not as diverse or powerful as blue tomatoes.

Production and Availability

– *Blue tomato:* Produced on a large scale in Canada, the USA and Spain, although it is not sold to the mass market, its demand and acceptance are growing.

– *Organic tomatoes:* Some consumers prefer them because they are considered healthier and contain fewer pesticides, but they do not necessarily contain more antioxidants than blue tomatoes.

Sustainability and technology

– *Blue tomato:* Because it is a genetically modified product, its cultivation can be more controlled and efficient in terms of resource use and pest resistance, which can lead to more sustainable production.

– *Regular tomatoes:* Production may involve the use of pesticides and synthetic fertilizers, which are harmful to the environment. However, organic and sustainable practices are on the rise.

Conclusion

The blue tomato stands out not only for its unique and attractive color, but also for its high antioxidant content and numerous health benefits. Compared to other tomato varieties, the blue tomato is a nutrient-rich and visually appealing option, ideal for those looking to add variety and added nutrition to their diet.
