Blue tomato: superfruit displaces traditional unique properties

It is the result of a genetic experiment conducted by 300 scientists that resulted in a high percentage of anthocyanins, natural pigments with recognized antioxidant properties.

The blue tomato is a relatively recent transgenic fruit, developed eight years ago in Norwich, UK, in an experiment carried out by a group of more than 300 scientists for medicinal purposes.

To create the blue tomato, the genes of a regular tomato were modified by incorporating genes from an ornamental flower known as snapdragon (Antirrhinum majus), known for its deep purple color. These genes allow tomatoes to produce anthocyanins, natural pigments with recognized antioxidant properties.

The result of this genetic modification is a tomato with an indigo blue skin that increases in intensity when exposed to sunlight. It retains its traditional red color internally when ripe and contains few seeds. This color combination is not only visually attractive, but also carries a number of additional health benefits.

Although the blue tomato is not yet widespread, it is already produced on a large scale in countries such as Canada, the United States and Spain for specialty stores.
