Perhaps a priori this is not one of the most attractive products. We may be a little hesitant when it comes to consuming it as well as preparing it, but offal or animal innards contain a lot of nutrients and hence provide a lot of benefits to the body.

In particular, as the Spanish Heart Foundation explains, those known as white entrails (such as brain and criadillas) are richest in fat, while those known as red entrails (liver, heart and kidneys) are richer in protein, iron and fat-soluble vitamins A and D, although they contain cholesterol.

The liver is one of those viscera that is considered very interesting to consume. In fact, the Ministry of Food explains that, if all hygienic and toxicological aspects are observed, it represents “an excellent and healthy food in situations where a high nutrient density diet is required, such as in childhood or old age.” And, they continue, “due to its high iron content, including it at regular intervals in the diet may be a good way to prevent the onset of iron deficiency anemia.” This is all the more important when you consider that anemia caused by dietary iron deficiency is one of the most common iron deficiency diseases worldwide.

But in addition to iron, the liver is a nutritional bomb. Here are all its properties:

  1. Biotin for hair, skin and nails

Liver is a very good source of biotin. Also known as vitamin H, it is part of the B vitamin complex. All B vitamins help the body convert food (carbohydrates) into fuel (glucose), which is used for energy. These B vitamins also help the body absorb fats and proteins. In addition, they are essential for healthy skin, hair, eyes and liver. They also help the nervous system function normally.

  1. Retinol for skin and vision

Another one of the most important aspects of liver is that it contains retinol. In fact, it’s in abundance, as a weekly serving of this organ meat provides all the vitamin A your body needs in one sitting. This vitamin helps form and maintain healthy teeth, soft and bone tissues, mucous membranes and skin. It is also known as retinol because it produces pigments in the retina of the eye. This vitamin promotes good vision, especially in dim light.

  1. Strengthens muscles and bones

Liver is beneficial to muscles due to its oxygenating function through iron-derived myoglobin. It is also rich in vitamin D, which is very important for the absorption of calcium in the bones.

Finally, according to the Spanish Ministry of Agriculture, Fisheries and Food, liver is rich in protein and minerals such as iron, which help fight anemia.
