Menu featuring Japanese spirits to celebrate the season


Japanese whiskey House of Suntory and chef Andres Madrigal are bringing the light and shadows of nature to the culinary menu starting in May at his restaurant. Per Se Bistroin Madrid.

In Japan, the changing of the seasons is celebrated from the cherry blossom trees in the spring, when Japan is painted pink for weeks, to the changing colors of the maple leaves in the fall, which bathe the country in red and orange hues.

In haute cuisine, the change of seasons is also very important in order to gather the ingredients at the most ideal moment, known as “shun”. For this Suntory House, hundred-year-old house of Japanese spirits with its Hibiki Japanese Whiskey Harmony in my head and Roku Jin Together with Andrés Madrigal, they created a gastronomic project to give life and celebrate the seasons.

Light at any time of the year

They called it “KomorebiA Japanese term for which we have no direct translation, but the meaning of which refers to the poetic moment in which light passes through tree leaves and creates shadows that appear only momentarily. Moreover, in each season we may find that the light changes, creating different and unique shapes.

Initiative conceived as a series ephemeral food will be held every season this year and promises to delight visitors with a unique gastronomic combination of nature, craftsmanship and the essence of Japan.

The presented gastronomic offer was developed by the chef. Andres Madrigal owner Per Se Bistro , in collaboration with House of Suntory, where raw materials are the key to a menu that uses traditional methods and pays close attention to detail, enhancing all the flavors nature offers us. Everything is in harmony with Japanese perfume from House of Suntory.including whiskey Hibiki, whose name means “Resonance”, refers to the connection between humans and nature.

Each of Komorebi’s four secret dishes represents the beauty and sophistication of the offering exclusive gastronomic experience, focuses on carefully selected seasonal ingredients.

Special combination

The menu is divided into four dishes. which reflect the key moments of each season in Japan and consist of two courses each, paired with Roku Gin cocktails and Japanese whiskey from House of Suntory.

Moreover, nature is not only in the ingredients, but also in specially designed cookware for this occasion it was handmade by a talented craftsman Valle Garcia from Earth Stories.

Each of the passes will have liquid mating from Hibiki’s hand, Handcrafted from a blend of over 30 styles from three House of Suntory distilleries in Japan, the whiskey is filled with subtle notes of white flowers, candied fruit and an elegant finish. The cocktails are designed by Juan José Mayo Garrido, House of Suntory brand ambassador.

Will also be presented artisanal Japanese gin Roku Gin, which means six, because of it six Japanese botanists which are collected at the moment of their ripeness, depending on the season of the year.

This exclusive gastronomic offer can be enjoyed at Per Se Bistro (Calle Augusto Figueroa, 32, Madrid).

In 2024, four unique and unrepeatable moments will be offered, scheduled for Sundays in mid-May, June, September and November.
